说起来我倒觉得楼主这句话 We have potatoes, vegetables, and mushrooms 不对劲
因为土豆是蔬菜的一种,这句话的意思是我们有土豆、蔬菜和蘑菇.给人的感觉是土豆不算是蔬菜的一种.
如果楼主想在众多蔬菜中突出土豆建议这么说：

我们有很多蔬菜比如土豆和蘑菇

我们有很多的蔬菜特别是土豆和蘑菇.
