随着我国餐饮行业的快速发展,消费者对餐厅的要求和消费心理也发生了变化.之前消费者大多以餐厅环境、口味、价格等来选择就餐地点,而现在越来越多的消费者非常看重餐厅的服务.
餐饮品质同质化的时代已经过去,餐饮人性化服务时代已经到来.餐饮服务营销已成为餐厅提高竞争力最有效的手段,以优质的人性化服务来满足现代消费者的物质需求和精神需求.服务营销的重点在于服务,而深究其服务的高质量原因是在于人力资源的有效利用.如何才能让顾客满意度提高,海底捞认为服务顾客第一线的就是员工,只有企业服务好员工,提高员工满意度及忠诚度,员工才会服务好顾客让顾客满意,最终给企业带来利润.
本文以海底捞火锅店为例,应用服务营销理论,以人性化的服务营销为主线,对海底捞的服务营销体系进行分析,并提出其存在的问题及建议.

With the fast development of China's catering industry, the requirements of customer's psychology has already changes. Before consumers mostly restaurant environment, taste, price, choice of dining locations, and now more and more consumers think highly of restaurant service.
Food and beverage quality homogeneity of the era of the past, and humanized service has come of age. Food and beverage service marketing has become the most effective means to improve the competitiveness of the restaurant, to high-quality human services to meet the needs of modern consumers demand for the material and spiritual needs. Service marketing emphasis is service, and get to the bottom of its service quality is attributed to the effective utilization of human resources. How to make customer satisfaction, the sea believes that customer service first-line is the staff, only the enterprise service employees, improve employee satisfaction and loyalty of employees, good customer service and customer satisfaction, and ultimately bring profit to the enterprise.
In this paper the seabed chafing dish store as an example, the application of service marketing theory, to humanized service marketing as the main line, to the sea service marketing system were analyzed, and put forward the existing problems and suggestions.
